Summary, Etc.This study analyzed the income generating potential of indigenous technologies in processing sweet potato and cassava roots in the rural areas. A market survey on the processed root crops were conducted in 59 towns in Leyte. The 23 indigenous root crops processed products were classified into fried, steamed (boiled), baked and dried and were subjected to cost and return analysis. Results showed that "maruya," "bitsu-bitso," cassava, doughnut, "pilipit," "sinaging," "ca-charon," slice and "tinitim" had positive net returns. While "camote chips," "baduya," "butse-butse," "pinutong shakoy," "kabkab," "puto-sulot," "shakoy," Java roll, "camote" candy, cassava "puto," Java cake, "ira-id," cassava "bibingka" and dried cassava chips had negative net returns. This loss was due to inefficient use of equipment, use of unnecessary ingredients and high labor requirement. The major problems of household enterpreneurs on root crop processing were unstandardized product formulations, drying problem, poor sanitation and imbalanced nutritional value of food products, poor packaging material, inefficient food processing and cheap selling price. Toward the scaling up of the root crop processing technology for appropriate rural industrialization, various researches must be conducted on cost and return and on the standardization of formulation and processing parameters
