A nine-phase study was conducted to evaluate a method that would yield candied dehydrated mangoes of good quality and marketability. Three osmotic dehydration procedure namely: 40-50-60 deg C Bx step-up method, 60 deg C direct immersion, and addition of dry sugar were evaluated through the determination of solute uptake-water loss behavior. It involved syrup cellular penetration and histological study, evaluation of two methods for drying mangoes and the effects of different predrying treatments on dried mangoes, and the development of a manual of specifications for dehydrated candied mango. Solids gain was highest in the 40-50-60- deg C Bx method and lowest in the 60 deg Bx method. Syrup cellular penetration after equilibration was deepest in the step-up process followed by the dry sugar method and then by the 60 deg Bx direct immersion. Histological study generally showed cell distention and a reduction in size of fruit slices soaked in hot syrup, while the addition of dry sugar caused plasmolytic effects and contraction of the protoplasmic constituents from the cell wall. The finished products using the 40-50-60- deg Bx and 40-40-50-60- deg Bx drying methods were not significantly different from each other except in flavor. The 40-50-60- deg Bx product had a characteristic mango flavor while the other method produced a very sweet product with no characteristic mango flavor. In determining the effects of predrying treatment, the sulfited sample was the best in terms of flavor, color, texture and general acceptability. Results of the physico-chemical tests of the sulfited samples were nearest to that of the untreated samples. Samples treated with 0.5%
