Jackfruit of the tinumbaga variety was subjected to treatments for candying and dehydration. The tests involved the effects of predrying treatments (blanching and sulfiting) on the sorption isotherm of dehydrated jackfruit, pumping (34-45, 35-55 and 35-65 deg Bx), and pilot scale production of candied dehydrated jackfruit. Results showed that the white pulp was only 20%
