$aSome properties and infrared spectra of extracted oils from the local (Lantana camara, coleus amboimcus, and Curcuma longa) and imported spices (Salvia officionalis L.; Origanum spp. and Curcuma longa L.) were compared. Properties of oil in imported spices such as color, specific gravity, acidity and solubility in different concentrations of alcohol were also found in the local spices. However, highest oil yield was obtained from imported Curcuma longa (2.10%). The essential oil obtained from L. camara was the same in physico-chemical properties and functional groups as that of S. officionalis L. The same were also observed in C. amboimcus as compared to that of O. vulgare and from the local C. longa to that of the imported C. longa. The extraction and property tests showed that the indigenous materials may be used as substitute flavor patterns for imported spices.
