Summary, Etc.     The effect of vinegar as substitute for glacial acetic acid on nata production using coconut water was investigated. The optimum factors such as vinegar concentration and acid content, age of culture and inoculum, and pH were found to be 4% vinegar concentration, 5% acid content and 48 hour-old culture and inoculum and pH 4 and 5.
