Summary, Etc.Shelled peanuts of the CS-10 variety were steamed, subjected to various treatments and bagged. At room temperature, steamed peanut samples showed longer storage and better keeping qualities than the roasted ones. The former was not yet rancid after one year of storage while the latter was already rancid after only a few months as revealed by the peroxide values. In terms of total nitrogen and non-protein N content, the steamed and roasted samples had no significant differences after one year of storage. Defatted flour of roasted peanuts gave significantly lower N-solubility index (NSI) than that of the steamed samples. Aflatoxin was detected in roasted samples after two months of storage while steamed samples were negative after one year
