Summary, Etc.The efficiency of 24 yeast species, 5 bacteria and 10 molds was assessed by determining the amount of protein (Micro Kjedahl Method), and sugar and starch (Fehling Leaman Schoorls Method) after 24 and 72 hours liquid and solid-state fermentation, respectively. High protein-yielding microorganisms were grown and fermented in a solid-state process using sweet potato and cassava media. Among the selected microorganisms, Candida guillermondii and Aspergillus niger produced the highest amount of protein in liquid state fermentation using sweet potato (13.04%)
