The processing of the raw, fresh bones into gelatin may be divided into the following stages: degreasing/defatting, demineralization, conditioning and pretreatment, extraction, drying, grinding to the desired grain size, and packing in airtight containers. The processing of skin raw materials to gelatin differs only from the processing of bones in the exclusion of the degreasing/defatting and demineralization processes. Blends of relatively high gel strength of ITDI bone and skin gelatins were used for hard capsule production experiments. The manufacture of these capsules is a major outlet for gelatin.
